A basket of fresh vegetables is a small joy and, occasionally, a small puzzle. What do you do with a bunch of unfamiliar soppu, or three gourds you didn't plan for? Here are a few simple, everyday ways to cook your way through a Jaivik Butti — dishes that let good produce speak for itself.

Any-greens palya

Whatever soppu your basket brings — dantu, harive, basale, methi — makes a quick palya. Heat oil, crackle mustard and a little urad dal, add chopped onion and green chilli, then the washed, chopped greens. Cover and cook a few minutes until wilted; finish with grated coconut and salt. Fresh greens cook down in minutes and keep their colour — one of the clearest signs of how recently they were picked.

Mixed-gourd huli

Ridge, bottle and snake gourd all do beautifully in a huli. Cook the diced gourd with toor dal until soft, add tamarind, a spoon of huli pudi and a pinch of jaggery, then temper with mustard, curry leaves and hing. A whole category of the basket, used up in one comforting pot.

Beans & carrot usli

A dry stir-fry of finely chopped beans and carrot with a tempering, a handful of soaked chana, and coconut. Ten minutes, and two of the basket's most reliable vegetables become a side everyone finishes.

Tomato gojju

When tomatoes are in season and plentiful, a gojju is the way to celebrate them — cooked down with tamarind, jaggery and spice into something tangy-sweet that keeps for days.
